I was throwing together a quick healthy dinner of wild arugula salad with tomatoes and avocado when I had a sudden craving for hummus. I have a mild obsession with hummus and when the mood strikes, I have to have it. So I went to the store and bought some chickpeas, and tahini to make my own hummus. I suppose since I was already at the store, it would have been easier to buy already made hummus, but ever since I made my own a couple weeks ago and realized how easy, cheap and delicious it is, I don't think I can go back to store bought! I have a problem of overestimating how much I can really eat, but I knew from past experience, I couldn't eat an entire avocado without being really really full. I put half of the avocado on my salad but didn't know what to do with the other half since I couldn't just store it in the refrigerator. Then a light bulb went off! What would avocado make my hummus taste like? DELICIOUS! I added the usual hummus ingredients: garlic, extra virgin olive oil, tahini, lemon juice, paprika, salt, pepper but added lime juice, chili powder and tabasco for some kick. I put a big spoonful over my salad with some paprika toasted pita points for a crazy delicious and healthy dinner. I will definitely make this again and play around with some other normal guacamole ingredients like jalapeno and cilantro and see what yummy guac-hummus hybrid I can come up with.
