My first week at my new station hasn't been too rough. Monday was a little difficult starting from scratch but I had help with my prep. I'm also struggling to move fast enough when many orders or large tables come in. Hopefully I improve and it gets easier. I'm really enjoying it though. My days past much quicker and I like learning new recipes and presentation styles.
I was also asked to recreate a wonton soup dish I made a couple months back for a VIP dinner next Tuesday! One of my proudest moments, I have to say. It's nice to have some affirmation that I am pretty good at what I do. I've had many doubts about whether or not I should have pursued cooking as a career rather than just a hobby--mainly because I wasn't sure if I had what it took to really succeed. Anyone can follow a recipe, but to make good food, with or without a recipe is quite difficult. But I know I'm improved and the positive feedback is keeping me motivated (as are my many screw ups.) I hope it's true when they say that if you love what you do, then you will succeed.
