It's hard cooking for one without making huge quantities and eating the same thing for days. As a result, I eat a lot of sandwiches for dinner. After cooking for 8 hours, being able to make a meal for myself in 10 minutes is pretty much as much time as I want to spend in the kitchen. That being said, I do enjoy cooking something fancier when having dinner with others. Something about feeding my friends good food and seeing how much they enjoy it rejuvenates me and I really don't mind cooking.
There's a point to my rant. I bought some pencil asparagus on Monday and was trying to use it up in as many creative ways as possible before it wilted. Monday was scrambled eggs with asparagus and feta cheese. Tuesday was whole wheat pasta with asparagus, parmesean, fresh ground black pepper and egg (my creative twice on pasta carbonara.) Today was a hummus, asparagus, feta cheese, parmesean and fried egg sandwich. I think that was my favorite dish. Salty, crunchy, cheesy, with gooey running yolkyness. Sooo delicious.
I also think every sandwich tastes better with a fried egg. Seriously. Try it. Think of your favorite sandwich and add a fried egg. Ta-da! Instant gourmet sandwich. That's my trained chef cooking tip for the day.
