I was clearing out my kitchen cabinets and discovered batter mix for banh xeo, a savory Vietnamese pancake. Banh xeo, a dish from the South, is a made of rice flower, tumeric, water and coconut milk. It can be filled with a variety of foods, but traditionally made with pork loin, shrimp, bean sprouts, scallions, onions, garlic and mung beans. It's eaten with fresh herbs, particularly mint, lettuce and fish sauce.
I decided to take it to work to try making some for my coworkers. I was a bit nervous since I've never made them before and thought they could never measure up to my mom's or the delicious ones I had in Saigon. I called my mom ahead of time and had her walk me through her steps and prepped all the mis en place the day before. I must say, they turned out to be a big hit!
I can't wait to try making them again and also adding my own variations.
