Mid-run today, I had an inexplicable craving for beets. Maybe I saw it on TV somewhere. Maybe the ridiculously hot weather did something to my taste buds. All I know is that thinking of roasted beets with walnuts and goat cheese got me through the miles. Post run, I headed straight to the store to get some of my dreamy beets, but not before getting a small snack. I had skipped lunch (gasp!) and needed some sustenance ASAP.
Pinkberry seemed like an appropriate treat for successfully getting off my lazy butt. Plus it was hot and I was craving something cold and juicy. I tried the mango with my usual choice of toppings--blueberries and fruit pebbles. It's like eating frozen cereal! So unbelievably satisfying.
Cruising into Whole Foods with my Pinkberry, I was a happy camper. I picked up gold and red beets and chicken thighs. To my pleasant surprise, the meat counter sells chicken by pieces. I only recall it being available prepackaged. I don't know why it made me so happy but it really did. I guess I've always thought prepackaged meat look a little sad. It's much more enjoyable to choose which pieces I want and have it nicely wrapped in butcher paper and handed to me. Sometimes it's the little things in life.
I took my ingredients home, worked a little magic in the kitchen and produced a lovely, healthy meal. I'm happy to say the meal was healthy, delicious AND pleased my tough critics.
On the menu tonight:
Honey balsamic roasted chicken
Roasted beets, toasted walnuts, goat cheese, white balsamic dressing
Curried whole wheat cous cous with scallions and lime
